I recently had a conversation about what I make for Dinner, you see I am a mom of four very active young girls aging from 1 to 6 years old, and so I make very quick inexpensive meals. That is what you will find here, what my every day meals consist of. I hope you will find it useful in making fast meals so you can have more time to spend with your family. If you have a quick easy meal leave me a shout out, I will add it to my blog!

Chicken Enchiladas

Chicken Enchiladas
Ingredients:
1/2 Container of Sour cream
Large can of Cream of Chicken Soup
5 Frozen Chicken Breast
5 large tortillas
2 Cups of Cheese
2 small cans of diced mild green chili

First I get 4 to 5 frozen chicken breast, put them into the pan filled with water and season with just about any seasoning salts, just so its not so plain. I put this on to boil and walk away.

After the chicken is cooked, I drain and chop. I then chop the tortillas into small pieces. I put the chicken into the pan and add sour cream, cubed tortillas, cream of chicken, cheese, and green chili. Mix it all up and put into large cake dish. Sprinkle with cheese and put into oven. Cook on 350' for about 15 to 20 minutes or until cheese is all melted and the tortillas are soft when fork is inserted.

How easy is that, I get compliments constantly on this one and it feeds my family of 6, plus 3 unexpected guests! I usually add a piece of buttered bread and honey with it!
