I recently had a conversation about what I make for Dinner, you see I am a mom of four very active young girls aging from 1 to 6 years old, and so I make very quick inexpensive meals. That is what you will find here, what my every day meals consist of. I hope you will find it useful in making fast meals so you can have more time to spend with your family. Bean Dip

Bean Dip

Ingredients
1 bag of tortillas chips
2 cans of re-fried beans
2 cups of shredded cheese
1 container of sour cream
1 container of guacamole ( you can make your own if you prefer)
1 pound of cooked hamburger
1 can of olives

I layer them all in a cake dish...beans, hamburger, sour cream, guacamole, cheese, olives. I then put it into the oven for about 10 minutes to melt the cheese. Then spoon out onto plates and add tortilla chips. I use the chips to scoop up the bean dip and yum yum! My husband crunches the chips up and mixes it all together. This usually has great left overs and so it can actually be for a dinner and then lunch the next day!

Super Yummy Potato Soup

Quick Potato Soup

1/2 Cups Butter
3/4 Cups flour
8 cups of milk
5 tsp. chicken bouillon
1 tsp. salt
1 tsp. pepper
8-10 potatoes, boiled to medium tender
1 cup shredded cheese

Cook Flour in the butter. Add milk, chicken bouillon, and salt and pepper. Simmer until thickened. Cut up potatoes, fold into soup, then add cheese. You can top with bacon bits, chives, cheese, or chopped onions. I got this recipe from some of my husbands family and I love it! I normally just add cheese!

Chicken Enchiladas

Chicken Enchiladas
Ingredients:
1/2 Container of Sour cream
Large can of Cream of Chicken Soup
5 Frozen Chicken Breast
5 large tortillas
2 Cups of Cheese
2 small cans of diced mild green chili

First I get 4 to 5 frozen chicken breast, put them into the pan filled with water and season with just about any seasoning salts, just so its not so plain. I put this on to boil and walk away.

After the chicken is cooked, I drain and chop. I then chop the tortillas into small pieces. I put the chicken into the pan and add sour cream, cubed tortillas, cream of chicken, cheese, and green chili. Mix it all up and put into large cake dish. Sprinkle with cheese and put into oven. Cook on 350' for about 15 to 20 minutes or until cheese is all melted and the tortillas are soft when fork is inserted.

How easy is that, I get compliments constantly on this one and it feeds my family of 6, plus 3 unexpected guests! I usually add a piece of buttered bread and honey with it!
